Livermush

I happened to read this article on csmonitor and learned of what I would have to guess is a revolting food called Livermush.

North Carolina goes hog wild over livermush

CHARLOTTE, N.C. – There are few words you can put in front of "mush" to make it sound even worse, right? Now add the word "liver." Sounds enticing, doesn't it?

When you learn what goes into livermush, it doesn't get any better, since it's a mixture of pig liver (at least 30 percent, by law), head parts, and cornmeal. Funny, then, how people in central North Carolina love it so.

If for some reason you need to get some, you'll be happy to know the annual festival, Livermush Expo, has begun.

It does sound rather disgusting. Which is exactly what I thought when I read it on a restaurant menu at a place in the mountains. But, I decided to be brave and try a piece. It actually wasn't bad. But then again, I grew up on a tobacco farm, and I guess my ideas of good food aren't quite the same as everyone else. We eat all the great fresh summer veggies and fruits. But we also had hogs when I was growing up, which we did eat. And let's not forget eating lunch in the fields. A can of sardines and a pack of saltine crackers were an option. So was potted meat or vienna sausages. I also eat liver pudding.
Have you ever thought of what goes into sausage or hot dogs? What about the casing sausage is enclosed in? I've helped make sausage...and it ain't the prettiest thing in the world either.
What about pate? That's simply duck liver...and people pay enormous amounts of money to eat that. Ducks aren't any more disgusting than pigs in my opinion.
